Cold Semolina Pudding with Honey

Recipe prepared by Dana Burlacu Visternicu, founder of prajituricisialtele.ro:

Cold Semolina Pudding with Honey  is a quick dessert, ready in 10 minutes. Since it's summer and it's very hot, I thought the cold version would be just right for a little cooling.

I often make this kind of dessert more by eye, but now I've weighed everything to make it easier for you. I hope it inspires you or reminds you, because I'm sure that for most people it's not an unknown.

Step by step preparation cold semolina pudding

Ingredients for 4 people:

  • 500ml milk (cow's, coconut, soy, etc.)
  • 75g semolina (approx. 5 tablespoons)
  • 1 sachet of Bourbon vanilla sugar
  • 1 teaspoon lemon zest
  • 1 pinch of salt
  • 4 tablespoons of honey Melinis with pears

Method preparation:

In a stainless steel saucepan with a double bottom, put the milk with a pinch of salt, vanilla sugar and lemon zest over low heat. You can use any type of milk, be it cow's or vegetable.

When the milk starts to boil gently, add the semolina in a drizzle and stir constantly with a whisk. Boil for about 1-2 minutes and then put the composition in small cups, bowls or even the entire composition in a single dish.

I chose to put it in some silicone molds.

Let the pudding cool then put it in the refrigerator for at least an hour. When serving it must be cold. That's what I thought now because it is very hot. It can be consumed very well and warm.

When serving, the cold semolina pudding is removed from the molds and will be complemented with Melinis with pears or anything else depending on preferences. Melinis with pears is velvety and smooth, a joy for the senses.

The brand Melinis brings together pure acacia or polyflora honey with raw fruits in a slow preparation process, without drying or boiling. This preservation process is carried out at an optimal temperature of below 35˚C, similar to the way bees transform nectar into honey in the hive.

This kind of pudding can be eaten for breakfast, snack or dessert. It keeps well from one day to the next and can also be decorated with fresh fruit.
