Boiled papanasi with cheese, walnuts and sour cherry melinis – sugar-free

How about a portion of boiled papanasi, with cheese, rolled in roasted walnuts and bathed in sour cherry honey? I used sweet cheese, whole grain semolina, and instead of breadcrumbs I put roasted walnuts.

They are delicious and suitable even for the little ones.

I didn't use sweetener or sugar because I served them with Cherry Melinis, but depending on your tastes, you can put 1 tablespoon of sweetener or powdered sugar in the walnuts ground.

Sour cherry melinis is a preparation based on acacia honey and sour cherries, with an irresistibly good, sweet-sour taste.

INGREDIENTS

  • 300 g sweet and drained cow's cheese
  • 100 g whole wheat
  • 2 eggs
  • 1/8 lgt salt
  • unpeeled lemon peel (grated)
  • 150 gwalnuts roasted and ground
  • 1  class="wprm-recipe-ingredient-unit">lg green sugar sweetener or sugar (optional)
  • Sour cherry melinis

INSTRUCTIONS

  1. Put in the bowl of the food processor: drained cottage cheese, semolina, eggs, salt, lemon zest and mix.
  2. We leave the dough aside for about 30 minutes, while the semolina absorbs the moisture from the cheese.
  3. During this time, bake the walnuts in the oven for 5-7 minutes at 180°C.
  4. The baked and cooled walnuts grind and transfer to a bowl.
  5. Add sweetener or powdered sugar to the ground walnuts. You can omit the sweetener/sugar, but that also depends on your taste.
  6. Wet your hands with water and make balls of dough, approximately 40g, and place them in the boiling water.
  7. Let them boil for approximately 7-8 minutes. When cooked, the papanas will rise to the surface.
  8. Remove them with a spatula and while still hot, toss them in the ground walnut mixture.
  9. When serving, add sour cherry melinis, which is honey combined with pieces of sour cherries. A delight!
