Wholemeal semolina pudding with coconut and pear melinis – vegan

You already know how much I love desserts, so for today I prepared a whole semolina pudding, with coconut and pear melinis, a fasting preparation.

The whole semolina pudding contains no added sugar, only the pear melinis with which I served the pudding.

I used whole wheat semolina because the amount of fiber that whole wheat semolina contains is double that of classic semolina.

As for the consistency, you can juggle the amount of semolina, depending on what you want.

It is an extremely simple dessert that you can prepare either in silicone molds, as I did, or in several bowls. I liked this idea of ​​using silicone muffin tins, plus the portions are smaller that way.

INGREDIENTS

  • 400 ml coconut milk (1 can)
  • 1/4 lgt ginger (powder)
  • 45-50 g whole wheat
  • Pear Melinis

INSTRUCTIONS

  1. Put all the canned coconut milk mixture in a small saucepan and place it on the heat.
  2. Add the ginger, stir, and when the milk starts to bubble, add the semolina.
  3. Add the semolina gradually, while stirring continuously with a whisk.
  4. Let it boil for 2-3 minutes and taste to see if it is cooked. We should not feel the semolina grains.
  5. When it is cooked, transfer it to silicone molds and leave it in the refrigerator for 1.5-2 hours.
  6. After the time has passed, check if the semolina can be removed from the silicone molds and transfer them to a plate.
  7. When serving, put Pear melinis over semolina pudding.
