The recipe is very simple and quick. The appearance is also not to be neglected because it looks very good, even elegant I could say.
Step by step preparation of panna cotta with honey and orange sauce
Ingredients for 4-6 servings:
- 400ml sour cream for the whipped cream
- 1 large spoon honey with sea buckthorn Melinis
- 5g gelatin granules + 50ml water
- 2 oranges
- 50g sugar
- 1 tablespoon cranberries for decoration
Preparation method:
Place the gelatin in a small bowl and leave for about 5 minutes. (I I do this in a small kettle).
In a stainless steel saucepan with a double bottom, put the cream for the whipped cream on low heat and leave until it heats up (it does not have to boil). Remove from the heat, add the honey with sea buckthorn and mix until it dissolves. The 60% sea buckthorn melinis has an absolutely fascinating intensity of taste and color.
I did not add any sugar, but if you like it sweeter, you can add a tablespoon of powdered sugar.
The gelatin is softened in a bain marie, that is, from that dense state it must be transformed into a liquid. Do not make it on direct heat or heat it up because the gelatin loses its properties.
Pour the softened gelatin over the warm whipped cream, mix and pour into cups/bowls. This amount makes 4-6 servings, depending on how big the containers are.
Place the cups with panna cotta with honey in the refrigerator and leave for about 1 hour.
Orange sauce
In the meantime, prepare the orange sauce. From half an orange, remove orange slices (preferably without the peel). This is done with a thin and sharp knife.
Mix the juice from half an orange with the sugar and put on low heat to boil a little. Squeeze over this what remains of the orange from where you removed the slices. After it has boiled a few times and the sauce has thickened a little, add the orange slices and let it boil a few more times, but not too much because we want them whole.
Each cup of honey panna cotta will receive a few carefully removed orange slices, then the remaining sauce is divided equally.
The dessert is decorated with cranberries or left as is. Keep refrigerated until serving.
It is such a delicate and aromatic dessert. The honey with sea buckthorn gives it a discreet flavor that is complemented by the light acidity of the oranges.
